Senior Sous Chef

Job Description:

We are looking to recruit a talented Sous Chef. If you have previous Sous Chef experience then we want to hear from you. The ideal candidate must be able to work off their own initiative and have excellent organisation skills.

Key Areas of Responsibility: 

To ensure that all areas of the kitchen are maintained to the standards required by The Station House Hotel.

To coordinate and execute training and to be able to motivate staff.

To maintain a safe, hygienic and healthy working environment, maintain HACCP standards and recording.

To cook food on a daily basis according to business requirements for all food outlets and to have a knowledge of a wide range of European cuisine.

Write and check standard recipes for all dishes to ensure proper portion control, uniformity of taste and quality.

To ensure that the high standards of cleanliness are maintained in all areas of the kitchen, such as machinery, equipment, floors and fridges.

To check on a daily basis food preparation, individual costs, quality, quantity inventories and portion control.

To achieve weekly and monthly GP targets

To plan and create menus with our Head Chef on a weekly basis in all departments, liaising with local suppliers for weekly specials etc.

To attend meetings as required.

To check daily function sheets, that all mason place is done and all ingredients are ordered.

The ideal candidate must have previous experience as a Sous Chef.

To ensure all guests requests are met

To ensure that there are excellent lines of communication with food service personnel
