We are a well established Country Guest House located on The Ring of Kerry. The successful candidate will be responsible for delivering high standards of food preparation and presentation in line with our Guest House standards and by doing so to create a positive experience for our guests. S/ will be responsible for overseeing the kitchen assistant in the preparation of meals and the maintenance of requirements in terms of cleanliness, wastage, and cost control. Main Duties and Responsibilities: 1. To support the Head Chef in the daily operation of the Guesthouse kitchen work plan 2. To undertake duties according to menu specifications as set out by the Head Chef 3. To oversee the kitchen in the absence of the Head Chef 4. To prepare high quality meals in accordance with existing Kells Bay House & Gardens standards, menu specifications and production schedules 5. To follow the instructions and recommendations from the Head Chef to complete the daily tasks 7. To ensure the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes, and preparation techniques 8. To instruct and lead the kitchen assistant through their daily requirements in food preparation and actively take part in set up of functions 9. To maintain the work area at all times in hygienic conditions according to the rules set by our Guesthouse and in accordance with health and safety standards 10. To oversee and control food stock and food cost in work section 11. To work with in compliance with kitchen requirements in the areas of cleanliness, hygiene safety, food wastage and cost control 12. To ensure the proper rotation of foods and highlight any items that need to be included into food production to avoid losses 13. To seek opportunities to increase a cost-effective food operation through the increase of revenue and the reduction of kitchen expenses without impacting on guest satisfaction 14. To work in a manner that ensures effective co-operation between the kitchen and restaurant area 15. To comply with all safety regulations of assigned tasks, and ensure a safe working environment 16. To adhere to hotel standards of food quality, preparation, recipes and presentation 17. To work effectively with the kitchen team to ensure correct preparation and delivery times are kept and food quality is maintained 18. To liaise with all the General Manager in Kells Bay House & Gardens to ensure effective and efficient communication at all times General Duties: 19. To arrive for work at the correct agreed time and ensure your uniform and appearance follows our Guesthouse standards 20. To keep the kitchen and general work area clean and tidy at all times 21. To comply with statutory requirements in relation to health and safety, hygiene, fire prevention etc. 22. To comply with all Kells Bay House & Gardens policies and procedures 23. To carry out any other reasonable duties to assist with the team.
