As an Irish owned company Kish fish Co Ltd is in the fish business for over 50 years and is expanding rapidly. We are currently seeking a full time and permanent sous chef for our day time restaurant in Howth on the West Pier. Typically 40-45 flexible hours a week.
As a sous chef you will report directly to the head chef and delegate tasks to other members of the kitchen staff
Responsible for Kitchen in absence of a Head Chef
Will be required to work on any section when necessary, to ensure quality and consistency is maintained within the kitchen
Liaising with other chefs, to ensure that the correct level of produce is ordered to meet per stock requirements.
Checking sections and ensuring that they are organised in an orderly and efficient manner.
Will maintain high levels of cleanliness and have a thorough knowledge of HACCP and record keeping to ensure food safety compliance.
Innovative and creative of new dishes and trends in accordance with business needs.
Stock and cost control responsibility
Minimum 3 plus years experience in a similar role
Ability to work in a fast paced environment
Must be able to work under pressure and deal with large volumes
Responsible to the Head Chef
HACCP or food safety qualification
Have excellent attention to detail
Have excellent organisational skills and communication skills
Have a good command of English
