Job Description:

Aramark Food Services currently has a fantastic opportunity for a superbly talented energetic Pastry Lead Chef. This is a permanent role that reports to the Executive Chef and is based on our high profile client account in Hollyhill, cork.

Day time hours, mainly Mon- Fri - exceptional product & great prospects.

Your key responsibilities will include but are not limited to:

·         Working 2 weeks out with menus, creating balanced menus using caffe macs ethos, writing menu descriptions and uploading onto menu maker.

·         Responsible for daily menu design and costing of menu items within your section.

·         Driving product development in your area and the implementation of new products, within our structure.

·         Take full responsibility for individual implementation of HACCP plan.

·         Work very closely with management to achieve budgeted GP.

·         Responsible for achieving ‘satisfactory’ outcome in all EHO inspections.

·         Responsible for achieving required pass mark in all Q&S audits, internal & client.

·         Ensure effective corrective actions are implemented for near misses, incidents & accidents within the operation.

·         Responsible for HACCP training of the kitchen team.

·         Ensure all HACCP for delivery, cooking and storage or food are up to date and signed off daily.

·         Focus on speed of service during peak times.

·         Ability to cost menu daily and create a database of core dishes.

Candidates must possess:

·         Minimum 3 years’ experience in a similar role preferred

·         Flexibility and the ability to innovate

·         Strong organisational skills

·         Knowledge of HACCP and ability to implement a HACCP Plan

·         Customer focused and keen to interact with customers on a daily basis.

·         Food costing knowledge

·         Ability to maintain standards, quality and innovation on a daily basis

·         Good Computer skills

·         Able to provide quick, effective, and creative solutions to problems
